What happens if you take three profiles from the inner city’s fine dining restaurants, a newly renovated restaurant with maximum light and tailor-made interior from Resize Design?
Answer: You get a top-class lunch restaurant.
Next to Edsviken’s water and natural areas, Sollentuna Mat has recently opened its doors. Behind the minimalist name hides northern Stockholm’s most exciting restaurant project this winter.
“It should be a lunch restaurant without a rigid feel, but with a really high class. So we have a tray lunch and no white tablecloths, but great ambitions for the food,” explains Tiki Blomkvist, one of the founders of the project.
She and the chefs Jonas Ålund and Magnus Olofsson have experience from a wide range of luxury restaurants in Stockholm: F12, Grill, Vassa Eggen, Sturehof, Riche, Tennstopet, Restaurant Smak…
From employment, they have gone on to being entrepreneurs in the industry and were therefore asked when the real estate company Balder was going to invest in Sollentuna.
“They needed someone who could start a better lunch restaurant. We had previously been in dialogue about other situations, but then this opportunity arose.
A one-year project plan with renovation and planning started. And when it was time to plan the interior, a single chair appeared on Tiki’s retina.
“I haven’t been able to forget the chairs we had when I worked at Bistro Nouveau, a restaurant that has been closed for a long time. Those chairs never broke. They never became rickety. We were so pleased, so I decided to contact the company behind it,” says Tiki.
It was a chair from Dutch Satelliet, which is represented by Resize Design in Sweden. There she began a dialogue with CEO Viktor Lindbäck, which resulted in a concept for the entire restaurant furniture. The brief was a tailor-made interior, with sustainable materials and a sofa solution with “booths” that could easily be moved away.
The result is seen in a dignified mix of green and black tones, elements of veined wood, stone slabs plus a good pinch of Nordic light. My thoughts go to hospitality or bistro in an urban environment. The latter flirts with the hotel that fits further up in the property.
– The green color comes from Jonas. It’s his personal favorite color. You can call it “British racing green” or bottle green. I myself have worked for many years at Sturehof and Riche and am fond of materials such as stone and brass,” says Tiki.
She is pleased with the result and particularly highlights the sofa solution.
– Our sofa booths – they are tailored to our needs and therefore mobile. For example, if we arrange a wedding in the restaurant, you have to be able to move them away easily. They can be worn if you are two people. It was very, very important that Resize Design could achieve this. A lovely and good solution for us.
In addition, she appreciates the outfit.
“We have got artificial leather as a material for the seating and it is very well made. It feels exactly like real leather. And we have stone slabs on the tables. They are also super nice.
Behind every detail is a dedicated team from Resize Design who made sure that the vision became a reality.
Viktor had overall responsibility and made sure that everything from budgeting to financing and the team made it possible to realize the ideas without compromise. Sandra kept the project in order and made sure that all parts flowed smoothly.
Vita suggested the fabric in “racing green” and the choice of artificial leather from Nevotex, which became an important detail for the character of the interior. Johanna drew the floor plan and was on site at the installation, making sure that everything was exactly according to plan.
Alma, the furniture constructor, made construction for the sofas, which made them both flexible and durable. Tomas was responsible for the quality of production and purchasing, so that every chair, sofa booth and table delivered the durability and finish required.
Together, the team created a furnishing that not only lasts, but also complements Sollentuna Mats’ ambitions.
